Cover and shake until the ingredients are well mixed and chilled. Place additional pineapple juice on a small saucer or plate. Place the Tajin seasoning on a separate small plate. Dip the rim of a rocks glass in the pineapple juice, followed by the Tajin to coat the rim. Pour ice into the glass, then pour the pineapple mixture over the ice. Top off with ginger beer.
